A Good Alternate Recipe

This is a good recipe for something different than the usual fish recipes. We found this recipe in Florida using Grouper. We have used Lake Trout in place of Grouper back home though. It's a nice change of pace. It is not exactly what you would call heart healthy. We use it now and then for something different.

Grouper Fillets With Parmesan Cheese

3/4 C fresh parm cheese grated

1/2 C butter softened

3 TBS mayonnaise

3 TBS chopped green onions

2 TPS chives chopped

4 grouper fillets about 8 oz

1/4 C fresh lemon juice

salt and pepper

Combine cheese, butter, mayonnaise, green onion and chives in a bowl and stir well.

Place the fillets in a lightly greased broiler pan. Drizzle the lemon juice over the fillets and sprinkle with salt and pepper.

Broil 6" from the heat for 8-10 minutes. Remove from oven and spread the tops of the fillets with the cheese mixture. Broil an additional 2 minutes until the cheese mixture is lightly browned. Remove the fillets to a serving platter and serve.

Serve with a good white wine and enjoy the sunset.

20 years ago we had Johnny Cash, Bob Hope and Steve Jobs. Now we have no Cash, no Hope and no Jobs. Please God, don't take Kevin Bacon.
