Wild Game Meat

Just looking to see what people's opinion and /or past experience has been with freezing deer / moose meat and how long it keeps.

I have eaten big game meat, which was wrapped in freezer paper, after to two years. I have also taken out frozen meat over the course of a year and processed it into smokies, jerky, etc then re-froze it again. Note that I have always used beef fat (not pork) when doing this for better freezer life.

I have also donated some of last year's meat to the local shelter house as well.

Obviously eating fresh is always best but some hunt seasons have been more successful than others ending in a fuller freezer chest than other years.

I have allways went to the grocery store and bought a roll of their produce bags, put the finished cuts in them, and then wrapped them in freezer paper. Seems to work well, but I eat enought wild meat that I rarely have much left by the time next season rolls around.

For sausages I will freeze all my burger/sausage meat the same way, then thaw out what I want and make sausages, smokies, or whatever else I want done.

We butcher our own deer and moose and always wrap the meat tightly with Saran wrap so there is not air trapped and then in butcher paper and it has never been freezer burnt. Last for years.

Hunted for many years and there is no comparison between meat that is frozen in vacume packages than freezer paper .Spend the extra money and have your meat vacume packed you will not be disappointed,year old meat is like the day you packaged it.
